Turns out that it was a deliberate move by a certain American sailor way back in the 19th century. And we all have much to thank him for the novel idea. The most popular theory behind the hole in the doughnut is credited to Captain Hanson Gregory, a native of Maine and a sailor on the American shores. Incidentally, the original doughnuts were whole pieces of sweetened flour dough , fried deep in oil, and were referred to as fried cakes.

When the cakes were fried, they used to turn up fine around the edges, but in the middle the dough would remain raw. Some historians say it was probably to save ingredients. Others think that he may have thought the hole would make the doughnuts more digestible. My personal favorite theory is that Gregory needed both hands to steer his ship during a storm, so he skewered some of the pastries on the spokes of the ship's wheel.

Now that's a man who wouldn't sacrifice his doughnuts for anything. Sadly, the first theory about needing a hole in order to cook the doughnuts evenly is the most probable explanation. Gregory himself is quoted in a Washington Post article from saying, "[I] cut into the middle of that doughnut the first hole ever seen by mortal eyes! But hey, I think I'll choose to believe that the doughnut hole was a happy accident resulting from a terrible storm and a man who couldn't bear to lose his doughnuts even if it meant risking his life.

Some people believe that the holes in doughnuts allowed them to be sold in a similar way. So what happens to all those doughnut holes that are cut out of the dough? Many people believe that those pieces of cut-out dough are what are used to make doughnut holes, which are those little round doughnut pieces that so many kids love to eat with milk.

Instead, special machines spray dough into a fryer in a circular pattern.
